Pea & Ham Soup

This soup is my husband’s favourite, it can be served chunky to show off the beautiful colours or blitzed to provide a thick, smooth soup.  It’s one of those recipes that makes life easy, as I can pull together a fresh batch in less than 30 minutes as long as I have some chopped ham in the freezer (I freeze leftover ham in pre-weighed packs for use in soups & pies).

INGREDIENTS – serves 4-6

1 large Onion – chopped

8 medium sized Potatoes – peeled & chopped

1 tablespoon sized knob of Butter

250 – 300g Cooked Ham

Frozen Peas

Ham or vegetable stock – homemade or shop bought

Freshly ground pepper to taste

Melt butter in heavy based pot, sweat off onions for a couple of minutes before adding chopped potatoes, cook for a couple of minutes over a low heat.  Add chopped ham & stock (enough to cover ingredients) & simmer until potatoes are soft.  Add frozen peas (I do this by eye rather than by weight) add extra stock if required & season to taste – serve as soon as peas are heated through!

Easy Yeast Free Pizza Base

My kids all love pizza but having seen how much fat & salt there is in a shop bought pizza I prefer to make my own – it’s also great fun to let the kids choose their own healthy toppings & ‘decorate’ their dinner!

The main problem with traditional pizza bases is that they contain yeast which means that you need to allow time for the yeast to work, which I just don’t have time for most days – this recipe can be made in just a few minutes & makes either a large pizza for 2 adults or 4 child sized ones!

2 cups Plain Flour (or 1 cup Plain & 1 Cup Wholemeal)

1/2 teaspoon Salt

2 teaspoons Baking Powder

2/3 cup warm water (you may need a little more)

Olive Oil

Mix dry ingredients together, add water & 1 tablespoon Olive Oil & mix well.  Knead for 2-3 mins adding a little more water if needed.

Roll out thinly & rub a little olive oil over both sides of the base to prevent it from sticking to the baking tray.

Add tomato sauce & toppings.

Bake at 180 degrees C for approximately 20 minutes.
